Upma is a popular and delicious Indian dish usually eaten for breakfast or lunch. This dish is made from semolina (suji) and flavored with various spices.

The first step to prepare Upma is to roast the semolina until it turns golden. Then fry mustard seeds (rai), urad dal, chana dal, asafoetida (hing), chillies and curry leaves in some oil in a pan. This tempering adds a fragrant and flavorful base to Upma.

Then, the roasted semolina is cooked in water until the water is absorbed and it reaches the consistency of porridge. It is often seasoned with salt, turmeric and red chili powder to add more flavor. Some people also add green vegetables like onions, tomatoes and green peas to make it more nutritious and delicious.

Upma is cooked slowly and often garnished with fresh coriander leaves or curry leaves as a finishing touch. It is usually served hot with coconut chutney, sambar or pickle.
