Dahi Idli is a delectable South Indian creation that gives a unique and refreshing twist to the traditional idli, a hearty pastry. What makes it different is the combination of soft, spongy idlis with creamy and tangy yoghurt gravy. This cooking begins with fresh idlis, usually made from fermented rice and urad dal (black lentil) batter.
The magic happens when these idlis are well marinated with plenty of whipped yoghurt, creating a combination of textures and flavors. The cool, tangy taste of yoghurt contrasts nicely with the hot, fluffy idlis, giving it a refreshing, creamy taste. A mixture of mustard seeds, curry leaves and green chillies is drizzled on top to enhance the taste and texture, adding an aromatic and slightly spicy flavour.
